Assam down town University, in celebration of National Nutrition Month 2024, embraced the theme “Nutritious Diet for Everyone” by showcasing a variety of easy-to-prepare, wholesome recipes. Students from the Food Nutrition and Dietetics programme, under the Faculty of Sciences, highlighted dishes like high-protein chicken and vegetable-stuffed rolls made from whole wheat flour, energy-packed traditional porridge from Mizoram, and fiber-rich chickpea salad.
Healthy dessert and snack alternatives were offered, such as fruit custard with reduced sugar, coconut and cucumber gazpacho, chia seed pudding, and brown bread sandwiches stuffed with paneer or chicken and vegetables. Students prepared cool drinks including mango lassi, a hydrating grape-lemon-zinc drink, and teas made from hibiscus and butterfly pea flowers as an alternative to carbonated drinks. The Balanced Diet Plate demonstration highlighted portion control and nutrient improvement, while also promoting the rainbow plate concept and encouraged home-cooked meals, making healthy eating more accessible and pleasurable for all.
