



Empowering Communities Through Food Innovation by Assam down town University
We are very happy to highlight the contribution of Dr. Radali Duarah, Assistant Professor and Programme Coordinator, Food Nutrition and Dietetics, who served as Resource Person at a Capacity Building Programme on Food Processing and Preservation organized by the Department of Community Science, Handique Girls’ College.
Through her insightful session and hands-on training, Dr. Duarah guided Self-Help Group (SHG) members in preparing value-added pineapple products such as jam, jelly, RTS beverages, chutney, and squash. Her industry-oriented approach highlighted the entrepreneurial and income-generating potential of food processing, inspiring rural women and SHG members to embrace sustainable business opportunities and economic independence.
