Date- 30th Oct 2026

Assam down town University, through its Faculty of Hospitality and Tourism Management, organised “The Flare Sear – Workshop on Flambé” as part of LUMOS 2026 under the Techno Management Fest 2026.

The workshop brought together culinary enthusiasts, including students from Assam Don Bosco University (Tapesia Campus), NSDC Guwahati and Tata STRIVE, offering them an immersive learning experience in the art, science and techniques of flambé cooking.

Participants explored essential culinary skills such as caramelisation, sauce preparation, sautéing, flavour balancing and professional plating, with special emphasis on safety protocols while handling open flames.

The workshop featured live demonstrations of four distinctive preparations: Bananas Foster Flambé, prepared with rum; Pineapple Malta Flambé, featuring brandy; the classic French dessert Crêpe Suzette, finished with an orange-brandy reduction; and Chicken Breast à l'Orange Flambé, showcasing pan-searing, deglazing and sauce preparation techniques.

By combining practical culinary demonstrations with the theatrical art of flambé, the workshop provided participants with valuable exposure to professional kitchen practices, contemporary food presentation and creative gastronomy, making it an engaging and enriching highlight of Techno-Management Fest 2026
